It’s hard to believe that 2017 is coming to an end. I don’t know about you all, but I’m SO ready for a new year and a clean start. There are many reasons that this past year is one that I want to move on from and I know I’m not alone.  Don’t get me wrong, there were plenty of joys and accomplishments this past year, but more times than not my heart was aching. Between the news, natural disasters, politics and even personal struggles I’m ready to kick 2017 to the curb as hard and fast as I can. In 2018 I want to slow the f*ck down and spend more time with my neighbors, friends and family. The farm can be so overwhelming sometimes but at the end of the day, it’s my relationships with my community and family that carry me through the ebbs and flows of the day to day grind. Without my village of people I’d be lost. Taylor and I are working on “working less” and enjoying more free time doing things we love and being with people who inspire and ground us. I hope that in the coming year you all get to focus on ways to enjoy the simple things in life that often pass us by. It can be overwhelming to not feel like we can make a difference in the big picture, but I’ve found that even small things like stopping to talk to the mailman (or woman) can impact the day in a really positive way. For example, my UPS drivers are on the top of my list of favorite humans on the planet (specifically you Travis!) Not only do they deal with our snowy, crappy driveway, but they don’t curse us out when Henry jumps into the truck (while it’s still moving!) and sits up front while they back into the driveway (he’s waiting for the dog treat that they generously give him each time they come). It’s funny how a bad day can be turned around just by engaging in a 1 minute conversation with members of our community. The news may not be very positive these days but simple, everyday interactions can run deep. And I think now, more than ever, taking the time to slow down and chat with folks who are in our daily lives is really important.

So, in the spirit of the season I want to raise a glass and bid farewell to one hell of a year! 2018 we are welcoming you with open arms. Cheers to more peace, joy, hope and love.

 

Honey & Thyme Champagne Sparklers

Prep Time: 15 minutes    Cook Time: 15 minutes    Serves: 4

  • 1/2 cup honey
  • 1/2 cup water
  • 6 sprigs fresh thyme + more for garnish
  • 1/4 cup fresh lemon juice
  • 1 bottle of your favorite Champagne or sparkling wine

Preparation

  1. In a small saucepan bring the honey, water and thyme to a low boil. Reduce heat and simmer for about 5 minutes or until the honey is completely dissolved. Remove from the heat and allow the mixture to steep for about 15 minutes. Strain the mixture into a small jar and discard the thyme leaves. Stir in the lemon juice and mix well. Refrigerate until ready to serve.
  2. Add about 1 tablespoon of the simple syrup to individual glasses and top with the bubbly. Garnish with extra thyme leaves and enjoy!

Notes

*Store extra simple syrup in an airtight container in the fridge for up to 2 weeks

    Love what you said about stopping to be with people…..and those “small” things are what actually gives us joy – not the stuff advertising wants us to buy 😉 I live in Canada but my heart has ached for all Americans. And basically what happens to the US happens to Canada. Anyhow Happy New Year and love what you share with people. Thank you for doing it faithfully.
