Creamy Chicken Salad with Hemp Seed Dressing
Prep Time: 25 minutes Cook Time: 0 minutes Serves: 6 servings
Creamy Hemp Dressing- 1 cup hemp hearts
- 1/2 cup water
- 1/4 cup lemon juice
- 2 Tablespoons olive oil
- 3 cloves of garlic, minced
- 1 teaspoon onion powder
- 1 teaspoon salt
- 2 teaspoons Dijon mustard
- 2 cups shredded or cubed cooked chicken (from a roasted chicken)
- 1 cup shredded green cabbage
- 1/2 cup finely chopped celery
- 1/2 cup sliced red grapes
- 1/4 cup finely chopped red onion
- 1/4 cup finely minced parsley
- 1/4 cup sunflower seeds
- 2 Tablespoons hemp seeds or hemp hearts for sprinkling
Preparation
- To make the dressing, place all the ingredients into a high speed blender. Whirl away on high until the sauce is completely creamy. If it seems too thick add a bit more water. Taste for seasonings and adjust as needed. Set aside.
- To assemble the salad add all the ingredients to a large bowl and toss well. Drizzle in half of the dressing and mix. Taste for seasonings and adjust if needed.
- Reserve extra dressing in the fridge for 4 days.
