In our household I tend to be the one in the kitchen most evenings. I love to cook so it is not a chore for me. However, when a certain someone says he would like to cook dinner for me, I gladly step aside. The only request was that I make a snack for the chef, and our friends that were coming for dinner. I brainstormed for a few minutes and came up with the idea to make some kale chips. They are easy, delicious, and definitely better for you than potato chips! I think the kale chips work best with curly kale. That is the only way I have prepared them and it works really well. Here is what you do:
*Preheat the oven to 350
*Grab a bunch of kale (about 10-12 leaves) and separate the leaves from the stems. Then tear the leaves into bite size pieces. Place them on a cookie sheet and drizzle with olive oil, salt, and parmesan cheese. Bake for 10-15 minutes, or until kale is browned but not totally burnt. Enjoy!

Onions, bell pepper, and a chilaca hot pepper.
He then cooked up some chicken and bbq sauce and mixed everything together. Of course there was a side of corn! It was pretty darn good!
I cannot believe my weekend is almost over. I still have dirt in my fingernails from work this week. However, what is going to get me out of bed tomorrow morning is apples! That’s right, apples are slowing making their seasonal debut and I want to be one of the first to take a bite!

Kale Chips = Holy Awesomeness I Never Expected! I am so excited that I FINALLY decided to give ’em a whirl. They were SO EASY to make and SO DELICIOUS that I’ll probably be making them ALL THE TIME now…not that I’m complaining, because I LOVE THEM.
