Sheet Pan Blackened Salmon Bites with Broccoli, Potatoes & Creamy Cilantro Sauce

I posted this recipe on my “Let Them Eat Dirt” website earlier this week because my kid’s loved this recipe. However, I feel that this recipe also deserves a spot on this website as well because it’s for every age group.

As a busy mom, I can attest to the fact that there is no greater meal than a classic sheet pan dinner. This is not only a simple method for cooking up any variety of protein and veggie, but it’s usually an easy way to get wholesome foods into your family’s diet. We jazzed up this simple meal with a yummy “magic green sauce” (aka creamy cilantro sauce) that my kids ACTUALLY ate and loved.

That creamy sauce is not only delicious but it’s loaded with cilantro which is a wonderful ingredient to incorporate into your diet because it aids in the process of eliminating heavy metals. Along with protein packed Greek yogurt, and detoxifying garlic this is a great sauce to add to any meal to jazz it up!

The salmon is tossed in a simple seasoning that would work well with any meat you fancy. Chicken, pork or steak.

My kids loved this meal and I’m so happy to report that the age group of 2, 4, 41 and 42 years-old give this a double thumbs up!

Blackened Salmon Bites with Broccoli, Potatoes and Creamy Cilantro Sauce

Prep Time: 15 minutes    Cook Time: 30 minutes    Serves: 4

Creamy Cilantro Sauce

  • 1 cup whole milk Greek yogurt

  • 2 Tablespoons extra virgin olive oil

  • 3 Tablespoons lime juice

  • 1 cup fresh cilantro leaves

  • 1 large clove of garlic, chopped

  • 1 teaspoon unrefined salt

  • 2 teaspoons pure maple syrup

Sheet Pan Salmon & Veggies

  • 2 teaspoons date sugar or coconut sugar

  • 2 teaspoons sweet paprika

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • 1/2 teaspoon ground cumin

  • 1/2 teaspoon dried thyme

  • 1 teaspoon unrefined salt

  • 1 1/2 pounds salmon, skinned and cut into 1 inch cubes

  • 1/4 cup melted ghee or olive oil, divided

  • 4 small potatoes, cut into 1/2 inch chunks

  • 4 cups broccoli florets

Preparation

  1. Preheat the oven to 400F. Lightly grease a large baking sheet and set it aside.

  2. Prepare the sauce by combining all the ingredients in a food processor or blender and blending until smooth. Taste for seasonings and adjust as needed.

  3. In a large bowl, mix together the date sugar, paprika, garlic powder, onion powder, cumin, thyme, and salt.

  4. Drizzle 1 Tablespoon of the melted ghee over the salmon chunks then dip each chunk into the spice mixture. Set them on a tray to the side.

  5. Drizzle another 1-2 Tablespoons of the melted ghee over the potatoes. Season with salt and pepper and then place them in the oven on the baking sheet for 15 minutes. Remove from the oven and give the potatoes a good toss. Add the salmon and broccoli onto the baking sheet. Drizzle the broccoli with the remaining melted ghee and sprinkle with salt and pepper. Place the try back in the oven until the salmon is cooked through and the broccoli is lightly browned and tender. About 9-10 minutes.

  6. Serve with the Cilantro Sauce and enjoy!

Notes

Cooking times will very from kitchen to kitchen. Make sure to cut your potatoes into small chunks to ensure even cooking. This recipe was inspired by the cookbook “Seriously, So Good.”
