Best Broccoli Salad

Let me introduce you all to the most badass, best tasing, healthiest, crunchiest, lightest, wont weight you down broccoli salad. This is the broccoli salad to bring to your next neighborhood cookout to wow your friends and make you the most popular neighbor. Seriously, this was that good.  And simple too boot!

This broccoli salad is a lighter twist on a classic broccoli salad which is usually loaded with mayo, cheese and bacon. And while I have no issues with the classic version, especially when you’re using high quality ingredients, I love this lighter take on it because we usually have broccoli salad at the same time that we’re eating heavier foods like grilled meats, potato salad, macaroni salad and baked beans. This is a welcomed side dish at a traditional backyard bbq.

This salad tastes great the day you make it, but honestly a day (or even a few hours) spent marinating in the fridge is ideal. I hope you all love this as much as we do. The smokey seeds are a must!

 

Best Broccoli Salad

Prep Time: 20 minutes    Cook Time: 0 minutes    Serves: 4-6 as a side

 Smokey Nuts & Seeds
  • 1/2 cup almonds
  • 1/2 cup sunflower or pumpkin seeds
  • 1 Tablespoon tamari or soy sauce
  • 1/2 teaspoon maple syrup
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon unrefined salt
Broccoli Salad
  • 2 Tablespoons extra virgin olive oil
  • 3/4 cup whole milk Greek yogurt
  • 1 1/2 Tablespoons apple cider vinegar
  • 2 teaspoons maple syrup
  • 2 teaspoons dijon mustard
  • 1 clove of garlic, minced
  • 1/2 teaspoon unrefined salt
  • 1/3 cup scallions minced (or sub red onion)
  • 1 1/2 pounds broccoli florets, finely chopped (about 5 cups)
  • 1/3 cup dried cherries or raisins

Preparation

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. Toss the nuts and seeds with the tamari, maple syrup, paprika and salt. Bake in the oven for 10-14 minutes or until golden brown. Remove and set aside.
  3. In a large bowl whisk together the olive oil, yogurt, apple cider vinegar, maple syrup, mustard, garlic, salt and scallions. Toss in the broccoli florets and mix until everything is well coated. Sprinkle in the dried cherries and roasted nuts and seeds. Serve.

Notes

This salad tastes great the day it's made, but even better the following day!
