Newsflash. I’m obsessed with beets. If I can throw a couple of beets into any recipe I am a happy girl.

I love beets so much that I don’t care if my pee is constantly bright red or that my hands are always stained. Don’t even get me started on the color of our kitchen counter. But hey, true love knows no boundaries.

This beet hummus recipe is so stinking good that I am convinced even “beet haters” will be caught double dipping into the bowl.

True story, Taylor used to be a beet hater. Now he requests beets all the time. Heck, he’ll even eat one straight out of the field with dirt still on it. I’m pretty convinced this is how it goes with all food. You think you hate something until you eat the real deal (try sprinkling a little dirt on it, that always makes it a little sweeter!)

This recipe makes the perfect snack for a couple of hungry farmers.  I am convinced it will be the perfect afternoon pick-me-up for all of you other busy people out there. Enjoy!

Beet Hummus:

1 very large beet

1 15 oz can chickpeas, drained and rinsed

2 TBS Tahini (roughly)

2 TBS extra virgin olive oil (roughly)

Juice from 1 large lemon

2 cloves of garlic, chopped

1 TBS ground cumin

lemon zest from 1 lemon

sea salt and freshly ground pepper

fresh minced dill for garnish

In a saucepan cover beets with water and simmer until tender (about 30 minutes)

Once beets are cooked place them in a food processor with all other ingredients (except dill) If mixture is too thick add a little more oil. Store in the fridge for 3-5 days. Enjoy!

    I actually really like beets…when they’re prepared for me. I cannot seem to make them without staining EVERYTHING! any tips?! 🙂 This looks great!

  2. I love beets. I love how earthy they taste. Really, they taste like dirt to me. In a good way!

    I agree–there are some vegetables that I did not like until I started working on a student farm at UCDavis and tasted them right out of the field. Dirt is sweet in California 🙂

    So….the first time I went on a beet kick, I ended up calling my mother in a panic after the beets had run their course through my system. I love that you love beets and can definitely use some beet hummus in my life! 🙂

  11. Beet hummus was the first kind I ever made by myself and it’s still my favourite! The beautiful pink colour is probably a big reason for that!

      Liz, my husband really did hate beets. This hummus lasted about 20 minutes in our house. He ate the whole bowl!

    I have never been a huge beet lover, in fact I hated them growing up b/c I was always given them from the can. Well, I had a roasted beet and goat cheese salad in San Fran a few years ago and was a convert. And I had a beet hummus recipe a few weeks ago and feel IN LOVE with beet hummus. This is so good it really can’t be described in words. Just try it, you will love it!

    Okay, so just made it and it was great! I tried roasting the beets instead of boiling, but am guessing that boiling is the better way to go, so I’ll stick to the recipe in the future 🙂

      I’m so glad you made the beet hummus! it’s one of our favorites. I normally love the flavor of roasted beets over steamed beets, but I agree that steamed beets work well here because they have a little more moisture. Thanks for sharing your thoughts!

    I made this today with fresh beets from the farmers market – ohhhhhhh baby!! It.Was.Delicious! And for some reason, it’s never occurred to me to add lemon zest to hummus. But it makes a HUGE difference – brightening up all the flavors in the hummus. Thank you so much for sharing!
