We’re a few weeks into our farm’s CSA season and as much as I love creating recipes to help anyone struggling with what the heck to do with all their veggies sometimes less is more. This charcuterie board is a great example of what to do when you don’t feel like cooking but want to eat a nourishing meal with minimal prep/cooking. Aside from making the arugula white bean dip (which you can make in advance so this all comes together in a matter of minutes) this board has everything you need for a simple meal.  Fat, fiber and protein is my jam and this board has it all. The arugula white bean dip is a fun and different way to use up fresh arugula from the market. Arugula is one of the healthiest greens you can purchase at the market and it boasts a lot of bio available nutrients like calcium, potassium, folate, and vitamins A, C, and K. It’s also an excellent source of phytochemicals like flavonoids and glucosinolates that can scavenge free radicals and offer anticancer properties.  Because of its powerful nutritional profile I try to sneak arugula into a lot of my meals. This dip is a great way to incorporate more arugula into your diet.
