Sweet potatoes just might be my favorite fall treat! They are naturally sweet which makes them a lovely addition to baked goods as well as savory dishes. Despite their name, sweet potatoes aren’t related to potatoes at all. They are a type of morning glory and do well in hot tropical climates–which is why they can be tricky to grow here in Oregon! However, with proper soil amendments, black plastic and row covers, sweet potatoes can thrive even in our cool climate. Sweet potatoes take a long time to mature and are available in late summer, fall and winter.
