Every great meal stars with an onion. Whether you’re using traditional storage onions (red, white or yellow) or adding fresh onions like sweet onions, leeks, scallions or shallots to a meal, each type of onion will deeply enhance the flavor of your dish.  Storage onions have a long shelf life and taste wonderful when cooked. Think soups, stews, stir fries, grilled onions or roasted onions. Storage onions are harvested in mid summer and when stored in proper conditions can last for several months.

All types of onions grow best in soil that is rich in sulfur and drains well. They need a lot of water and weeding (so they don’t get crowded out. However, if taken care of properly in the field you can be sure to have a healthy harvest!

You’ll notice that a lot of recipes on DUTD start with an onion and I hope you enjoy these lovely alliums as much as we do. Cheers to the mighty onion!
