My old farm crew back at Hutchins Farm declared that beets were my spirit vegetable. I didn’t know you could have a spirit vegetable but as it turns out, it’s a thing! I love beets and their sweet, earthy flavor is one of my favorites. I’ll eat beets raw, straight out of the ground with a little dirt still on them. However, they are particularly delicious when roasted, tossed into soups, or grated into a salad. The greens are edible as well so try and avoid tossing them away if possible. They taste similar to chard and are great raw, sautéed, or steamed.
