Dishing Up the Dirt

In celebration of the first snowfall in Concord, I thought it was only appropriate to cook up a winter-like meal.  And when I think of snow and cold weather, I think of winter squash. (Even if we harvested it way back when.) So tonight, while I sipped on a Sam Adams “Old Fezziwig Ale” I got to cooking.  And don’t worry, this recipe is sure to knock the socks off all your friends, lovers, and relatives alike.  Plus it’s easy, inexpensive, and not to time consuming.

Here is what you will need.

*1 medium-sized butternut squash peeled and cubed

*around 1/2 cup -3/4 cup of heavy cream

* 4 sage leaves diced

*1/3 cup -1/2 cup of parmesan cheese

*salt and pepper to taste

Preheat your oven to 400 degrees.  Mix your squash, sage, and heavy cream in a bowl like so:

Sprinkle with salt and pepper

Cook for about 30 minutes covered with aluminum foil.  Then take out your squash, sprinkle with the cheese and put back in the oven for another 10-15 minutes uncovered. Serve hot with a side salad like us.

Enjoy!  This was super easy and delicious.

Henry really likes butternut squash too.  This is a meal for all!
