Dishing Up the Dirt

Creamy Vanilla-Almond Chia Seed Pudding

This chia pudding is a great breakfast because it is full of superfood nutrition. Chia seeds are packed with protein, fiber and omega-3s just to name a few. When paired with other delicious ingredients it makes for a powerful morning treat.

What I love most about this breakfast is that it’s prepared the night before. The only thing you need to do the next day is spend two seconds throwing on your favorite toppings. It doesn’t get any easier than that!

Cheers!

  1. What a great idea to blend it all together first.. I like the flavors you have going on here and will definitely be trying this! Glad you found a morning solution to curb your hunger!

    1. I hear ya on the texture — it’s the reason I’ve always avoided chia pudding as well. But blending it — especially with the banana — really is a great idea!

Is it bad that I eat two breakfasts and I’m not a farmer? πŸ™‚

I love this recipe, it looks amazing!. I’ve been getting a little bored by my morning quinoa and can’t wait to try this… for at least one of my breakfasts….

Second breakfast is one of my favorite meals! I never seem to be able to make it to lunchtime either πŸ˜‰ This chia pudding looks fabulous! I made 2 quarts of chocolate chia pudding last week and I’m already ready for another 2-quart batch, lol! So healthy and tasty! πŸ˜€ Happy weekend, love!

  5. Love meals like this you can make in advance for when hunger calls and time is short. Looking at this is making me want my own 2nd breakfast…

  6. I’ve been wanting to try chia pudding but haven’t gotten around to it. I add them to my overnight oats every night and luuuurve how gooey they get! Also, the second breakfast idea – genius!

  8. It’s been a while since I tried chia pudding, because I have the same reaction to the tapioca texture as you. BUT I have a feeling I could get behind this blended version! And oh my god, I can barely sit at my desk and type by lunchtime, never mind do farm chores. You TOTALLY need that second breakfast! Think I can justify it at my desk? πŸ™‚ Have a great weekend lady!

Sounds delish. That’s definetely one serving for me though, not two! Probably why you’re so tiny! I couldn’t be full after such a small thing hahaha

Thank you for this recipe. I, too didn’t like the texture and never tried the blender. I will definitely make this!

I have a small garden and what I’m dealing with is the heat already. I’m hoping to get my tomatoes in before it gets any hotter. Just started planting my summer garden.

    1. Andrea says:

Good luck with your garden!!! I hope you like this blended version of the pudding. Let me know if you try it.

What a game changer blending it all up as far as texture, so good. I love the possibilities this recipe allows. I made two batches for this upcoming week. In the first batch, I added a bit of leftover coconut whipped cream as an extra treat and in the second, added a few teaspoons of matcha to the mix. Thanks again!
