Let me guess…You could use a healthy and cleansing soup to bounce back after the holiday. Or at least a little breather in-between now and New Years. Don’t worry, I’ve got just the meal for you. Besides, I am whipping up a batch of delicious New Years cocktails to share with you this weekend and I think this is a healthy break for us all! This hearty stew comes to you courtesy of Blue Apron.  Have you heard of this company before? Blue Apron is a service where people can have fresh ingredients and recipes delivered right to their doorstep. Each box comes with ALL of the food you need for each recipe, along with recipe cards and beautiful photographs with step-by-step instructions. There are hundreds of healthy recipes on their site which makes it fun to browse!

What the heck is a farmer doing with a food delivery service you might ask? I don’t do many product reviews on this sight for a lot of reasons. However, I made an exception for Blue Apron because I really believe in what they do. This service is perfect for people who don’t have access to local farmers markets, are beginner cooks, or live far away from a grocery store.  As soon as I heard about Blue Apron I immediately contacted my brother and his girlfriend because they love to cook but live two hours away from a decent grocery store. It snows a lot where they live too and I know they would use a service like this during the long winter months when they don’t drive to town much. What’s great about each box is that you still GET to cook (nothing is pre-prepared) but everything is portioned out with easy to follow instructions. This is important to me because my goal is for people to get comfortable cooking easy and healthy meals in their kitchen from scratch. The more practice you get the easier it is to come up with your own healthy twists on meals you have enjoyed in the past.

I was really excited to whip up a batch of this winter vegetable stew. It has some of my favorite root vegetables including lovely sunchokes (which I do not cook with nearly enough!) This soup really hit the spot on a particularly chilly evening here in Oregon. We enjoyed our soup with a tasty glass of pinot noir and then we headed to bed early.

  5. Such a great idea! Especially for those who live a bit further out of town, like you said. In the bad weather, I think we could all use something like this! Looks delicious.
