Ginger-Rosemary Lemon Cocktails

 

The sun has been shining, the days have been long and cocktail hour still remains a priority a couple of evenings each week. These drinks are fresh, flavorful and will help ease sore muscles after a day spent in the dirt (or a day spent at the desk!) I love using local honey as a sweetener in my cocktails and the addition of fresh ginger root and rosemary makes for a lovely simple syrup. A healthy squeeze of lemon juice and vodka and viola! Cocktail hour just got really tasty. I hope you all enjoy these refreshing drinks as much as we do.

Ginger-Rosemary Lemon Cocktails

Prep Time: 15 minutes    Cook Time: 20 minutes    Serves: 8

  • 1 cup honey
  • 1 cup water
  • 1 (2 inch) piece of fresh ginger, sliced into thin coins (no need to peel)
  • 2 sprigs fresh rosemary + additional for garnish
  • 1 cup fresh lemon juice (from about 5 lemons)
  • 1 1/2 cups vodka

Preparation

  1. In a medium saucepan bring the honey and water to a boil. Reduce heat to low, add the ginger and cook, stirring occasionally, for about 10 minutes. Remove from the heat and add the rosemary. Let the syrup steep for about 20 minutes. Strain the mixture into a bowl and discard the rosemary and ginger (actually keep the ginger and eat it!) Place the mixture in the refrigerator to chill.
  2. Fill a large pitcher half full with ice and pour in the vodka, simple syrup, and lemon juice. Give it a good stir and serve.

    For the record that’s east coast time, not early afternoon Oregon happy hour, though I certainly wouldn’t hate that.

    FYI – use a regular teaspoon to scrape the skin off ginger root. It’s a slick way to get rid of the skin and keep all the fragrant ginger. Hold the spoon with the bowl side facing you and pull the spoon toward you….just the opposite of the way you’d use a peeler on a carrot. It makes a lovely difference. Better ginger for syrups, baking, and making chai, too.

    I made this cocktail yesterday to celebrate a weekend in Chicago warm enough to put the deck and porch furniture out. It is a lovely warm weather beverage. Goes down very easy. It was a little light for my Manhattan loving husband but perfect for me.
