Pomegranate Champagne Cocktails

It’s still the holiday season and we need to enjoy every second of what’s left.

I cannot take full credit for this delicious and festive cocktail. My sister-in-law came up with this fun twist on a traditional mimosa when we were back east for Thanksgiving. We called them “Pomosas”. So fun right? Needless to say, I haven’t stopped thinking about them since we returned to the farm.

These are the perfect festive drinks to make on New Year’s Eve. Or even a lovely cocktail for brunch on New Year’s Day. I wish I could say Taylor and I enjoyed these while we did something romantic. The truth is, we drank these fancy champagne cocktails while wearing our dirty farm clothes sitting by our wood stove with a pen and paper and organized/changed our seeding schedule for the 2014 season. Don’t worry, we each only had one so we were able to make some important decisions with clear minds! We made some great progress but we still have a ways to go. A lot of changes this season. I’ll keep you posted on that another time.

In the meantime, I hope this holiday season was a healthy and happy one. Let’s clink glasses and celebrate the end of a long year and a hopeful beginning to the next. Cheers everyone.

Pomegranate Champagne Cocktails

Prep Time: 5 mins.    Cook Time: 0 mins.    Serves: 4

  • 1 bottle of champagne (or any bubbly of your choice)
  • Pomegranate juice
  • Fresh pomegranate seeds (optional)

Preparation

  1. Pour champagne into four glasses. Top each glass with a splash of pomegranate juice and a sprinkle of pomegranate seeds. Cheers!

    Somehow I missed this post until RIGHT NOW and it made me so happy! This past Christmas Tasia and I did champagne+splash cranberry+floating frozen cranberries+squeeze of lime (to add a dash of green to the red glass)– and it was so darn festive and cute! And now I’ve been mixing club soda wine…. in bars in public…. to make my own wine spritzers….. Yes, I am that classy.

    Why ARE champagne and wine cocktails so killer?!?! We’ll have to experiment more the next time we’re together. Miss you guys!
