Cucumber-Lime Vodka Coolers

Is it heating up where you live? If so, these super delicious farm fresh drinks will surely cool you down.

These cocktails are a great way to use up excess cucumbers that may be growing in your garden or flooding the farmers market stands in your neighborhood. They are a cinch to whip up and are definitely going to become our go-to summer beverage.

Cucumber-Lime Vodka Coolers

Prep Time: 5 minutes    Cook Time: 0 minutes    Serves: 4

  • 1 large cucumber, peeled
  • 1/2 cup fresh lime juice
  • 3 tablespoons honey + more if needed
  • 7-10 fresh mint leaves
  • 3/4 cup vodka
  • 10 Ice cubes

Preparation

  1. Place all the ingredients into a high speed blender and whirl away until smooth.

*Use this recipe as a guide and adjust measurements and ingredients as needed.

    Wow! While completing my morning jog, I was thinking about food. (Yes, I do that.) I thought, “I wonder if Andrea has any cucumber recipes on her site? I love cucumbers on a hot day.” Low and behold, you have surpassed my expectations…a cucumber recipe waiting for me and it contains vodka!     A while back, my friend made me a cucumber cocktail using freshly juiced cucumbers. This whole time I thought I would need a juicer to enjoy a tasty cucumber beverage and I’m so happy to discover I can just throw some cucumber in a blender.     How do you get the honey to mix in well? Mine just stuck to the bottom of my blender.

      I’ve never had a problem with the honey sticking to the bottom with my blender…. Not sure what’s causing yours to stick. It should mix well with all the other ingredients.
