Blueberry Lemon Energy Bites

I’ve been on a big blueberry-lemon kick recently and these little energy bites are bursting with fresh flavors. They are the perfect mid-morning pick-me-up and even wonderful as dessert. They can be whipped up in less than 10 minutes and keep well in the fridge for up to a week (although they never last that long!)

Blueberry Lemon Energy Bites

Prep Time: 10 mins.    Cook Time: 0 mins.    Serves: 12 bites

  • 1 1/2 cups cashews
  • 1/2 cup unsweetened shredded coconut + additional for rolling
  • 1/2 cup dried blueberries
  • 3/4 cup medjool dates, pitted and roughly chopped
  • 1-2 Tablespoons fresh lemon juice
  • 1 teaspoon lemon zest + additional for rolling
  • 1/2 teaspoon pure vanilla extract
  • Pinch of fine sea salt

Preparation

  1. In a food processor blend cashews and shredded coconut until they become a coarse meal.
  2. Add blueberries, dates, lemon zest, lemon juice, vanilla extract and salt. Process until the mixture forms a rough dough that can easily hold together when pinched between your fingers.
  3. Taste test and add more lemon juice if necessary.
  4. Roll into small (1- 1 1/2 inch) balls. Roll the balls into additional coconut and lemon zest. Store in an airtight container in the fridge for up to a week.

      1. I made these today in preparation for a road trip this weekend, and they are amazing! Love the lemon, coconut, and blueberry together. I roasted the cashews first to bring out a little more of the nuttiness as well. Thanks for another great recipe, Andrea!

        Tried ’em and they were amazing! ended up throwing in some almonds because I ran out of cashews and used about half as much coconut (because I ran out of that as well hehe) I imagine they would be even better with all the ingredients!

        I used roasted almonds & walnuts instead (cause its all I had) and my food processor struggled to chop the dates….I assume my choice of nut was the cause

    What would you suggest as a substitute for nuts? Thoughts on sunflower seeds ?

    I’m allergic to cashews. Would almonds/almond meal or another nut work? Any suggestions on substitutions?

      Almonds or macadamia nuts would all be great substitutions.

    Is there any way to use fresh blueberries?

      Fresh blueberries will have more water content which will change the consistency of these. I’d recommend dried for this recipe. You can dehydrate fresh blueberries in your oven on the lowest temperature for multiple hours. I hope this was helpful!

      I have not tried this with flaxmeal in place of nuts so I can’t say for sure how they’d turn out. If I were going to make this without the cashews I’d probably add some oats with the flaxseeds to help bind everything together. Let me know. Thanks!

    These are delicious, thanks for the recipe! Can’t find dried blueberries at my local supermarkets (I’m in NZ) so I’ve used cranberries – not sure if that makes them sweeter. I’m wondering if they’ll freeze ok? I am expecting baby #2 and these would be great little pick me ups for night time feeds – if only I could prepare them ahead of time.

    These are awesome. I had to improvise because I didn’t have dates or a food processor. I just used more blueberries and added some honey and more lemon juice so they would stick together. So good!

    Are dates a must? I’ve never really tried them but the looks of them remind me of prunes /: could I substitute with something else?

      The dates are critical in this recipe as they help bind the balls together and add sweetness. I wouldn’t substitute with prunes as the flavor will be different (and so will the texture)

      these make 12 balls.I don’t calculate the nutritional value of my recipes but I’m assuming these would weigh in around the same nutritional value as a Lara Bar.I hope you enjoy them as much as we do!
