sweet potatoes part 2

We were so happy with our sweet potato pancakes from last night.   They were so good that we were still talking about them at breakfast this morning.  And since we still have some left over sweet potatoes I decided to throw them into a pasta dish.  And of course, with a little bacon, a new amazing recipe is born.

Tonight I made sweet potato pasta with bacon and goat cheese.  What part of that ingredient list don’t you like?  It turned out really well, and why wouldn’t it?  Every part of this dish was delicious.  The whole meal took less than 45 minutes, and worth every minute!

Here is what you will need:

Pasta (any kind)

5 strips of bacon (fried and torn into bite size pieces)

4 sweet potatoes chopped into bite size pieces (mine were kind of small)

3 cloves of garlic (minced)

1 cup chicken broth

1/3 cup goat cheese (give or take) crumble it up!

After you fry your bacon, set it aside on paper towels.  Cook your sweet potatoes and garlic in the bacon fat.  Cook for 5 minutes.  Add the chicken broth.  Bring to a boil.  Reduce heat, and cover.  Cook for about 20 minutes or until the sweet potatoes are soft.  While the sweet potatoes are cooking, cook your pasta according to the directions.  Once your sweet potatoes and pasta are cooked, mix everything together, add your bacon pieces, and goat cheese crumbles.  Serve hot!  YUM!
