I need to join a book club.

All I want to do is talk about Gone Girl.

Unfortunately, all of my good friends live over an hour away.  I haven’t made any friends in Hood River yet, (hopefully a winter job will fix that) but I need to find a book club that is reading Gone Girl asap!

Until then I will hold my head high, strap on my favorite apron, and cook you all delicious food.

These chipotle quinoa sweet potato patties were delicious. Crispy on the outside, moist on the inside, and packed with flavor. They would also make a fantastic veggie burger.  We have left over batter so I am heading to the store to buy buns.  Yum!

We topped our patties with avocado and mixed greens.  They were fantastic.

Ingredients: (You can adjust the spice level to your liking. This is just an estimate of what I used.)

1/3 cup quinoa

2/3 cup water

1 cup cooked sweet potato

1/2 cup white kidney beans, (any other white bean will work)

1/2 tsp chipotle powder

1/2 tsp garlic powder

1/2 cup panko bread crumbs

olive oil for cooking

Start by cooking the quinoa. Combine quinoa with water.  Bring to a boil, then reduce to a simmer and cover.  Cook for about 10-15 minutes or until quinoa is light and fluffy. Set aside.

Wash your sweet potato and dice it ( I don’t peel my sweet potatoes but you definitely can).  Place it in a pot with water and bring to a boil. Reduce heat and simmer until sweet potato is fork tender. About 10 minutes.

Once sweet potato and quinoa are cooked wait until they are cool enough to handle.  Place them in a large bowl with the beans and spices.  Mash with the back of a fork or potato masher. Leave some of the mixture a little chunky for texture!  Form patties (we were able to form 4 medium sized patties, and sprinkle each side with bread crumbs (and a few sesame seeds if you’d like). Heat a large skillet over medium heat with a little olive oil.  Cook each patty for about 5 minutes per side or until browned and slightly crispy.
