I have a lovely quick meal for you.

Sauteed veggies and rice over a bed of steamed kale.  This of course was drizzled with my favorite Tamari-Ginger sauce.  It was healthy, filling, and a good way to get all your veggies in one meal.

For the sauce:

For the sauce:

1/2 cup tamari

1/2 cup water

1 tbs rice wine vinegar

1 tbs grated ginger (or more)

1 clove garlic, crushed (or more)

1/2 cup minced scallions

2 tsp sesame oil (or a little more)

1/4 cup tahini

2 tsp sugar or maple syrup

1 tsp corn starch

Whisk all the ingredients together in a bowl and let stand for 10 minutes or so.  Serve over you favorite stir fry!

This would be summer squash, zucchini, green peas, carrots, bell pepper, mushrooms, and tempeh all sautéed up in a little olive oil.

We steamed our kale for about 5-7 minutes.  Served everything with some brown rice and a drizzle of the tamari-ginger sauce.  It was delicious!

If you are short on time I recommend making this.  It only takes about 20 minutes!

    That looks like long-grain basmati, but I take your word for it . 🙂 Yumm…

      haha!! I’m pretty sure it’s brown rice, but is sure doesn’t look that way in the picture. Regardless, you must make this sauce and drizzle it on some veggies and rice. We can’t seem to get enough!

    Is this sauce uncooked?
    If so, curious about raw cornstarch- does it thicken the sauce without cooking?
