Did you all know that tomorrow is Valentines Day?

It almost slipped my mind until my husband showed up this afternoon with these lovely flowers.

What a guy!

I wasn’t feeling so hot after my 17 mile run so these flowers really cheered me up.

In fact I was feeling so loved that I thought I would return the favor by cooking up Taylor’s favorite root vegetable (which happens to be very festive if you ask me!)

Yes, I am aware we are a day ahead of schedule but when you feel the love you gotta go for it!

And this afternoon I had nothing but love, beets, and cheese on my mind!

Take notes.  This meal screams romance.  And when your lover goes back for thirds you know you nailed it!

Beet and goat cheese quesadillas.

Good for the heart and sore muscles.

You start by roasting 4 beets. ( you will have leftover beet puree which is ALWAYS handy!)

Peel and puree them.  I puree mine with a little olive oil, salt, pepper, and a dash of cream.

Spread mixture over a whole wheat tortilla.

While your beets are roasting you should sauté up an onion, 2 cloves garlic, and about 3-4 cups spinach. (if it was summertime you could use the beet greens instead)

Add a little cumin, paprika, and dried oregano to the pan with the onions and greens.  Mix.  Cook until greens are wilted and onion is soft.

Spread mixture over beet sauce.

Now it’s time for some cheese!  My favorite part.

A little goat cheese.

And a handful of mozzarella.

Place another tortilla on top and cook in a frying pan in a little olive oil for about 4 minutes per side.

Serve with a little plain greek yogurt and cilantro.

Whether you enjoy this meal solo or with someone else, you will feel the love.  Trust me!
