black bean burgers

Dinner last night was a home run.  And completely vegetarian!  Taylor literally asked, “are you sure there’s no meat in this?” As he chomped away at his vegetarian friendly dinner.  These black bean burgers are easy and ready in 15 minutes!  Can’t beat that.

We enjoyed our burgers with some extra sharp cheddar cheese and a side of sweet potato fries.  Delicious!

Ingredients:

1 can black beans, drained and rinsed

1/2 a bell pepper, diced

1/2 onion, diced

3 cloves garlic, peeled and diced

1 egg

1 tablespoon chili powder

1 tablespoon cumin

1/2 cup bread crumbs

Here’s what you do:

Mash your beans with the back of a fork.  Add all other ingredients and mix well.  Form 4 patties.  Place in a greased skillet over medium heat.  Cook for about 5 minutes per side.  Enjoy.

Sweet potato fries:

3 medium sweet potatoes (peeled and sliced into fry shapes)

1/3 cup olive oil

2 tsp cumin

1 tbs chili powder

1 tsp salt

1 tsp pepper

Mix everything together in a bowl.  Spread evenly on a baking dish and bake in a 450 degree oven for 20 minutes.  Turn fries over once during the cooking process.  Enjoy

A complete side note.  Henry has taken up a new habit.  Whenever we leave the house he jumps up onto the table and watches us drive away.

We find him asleep on the same table when we get home.  I need new sponges!

      I read the book on our road trip. I cried like a baby!!! loved the book. I have never looked at Henry the same!

    Agree that “Art of Racing in the Rain” is good for anyone who loves dogs.
    Some people love it, others may find it a bit kitchy, but it really does inspire you to think about things from a dog’s perspective.

    I’m a burger snob & these black bean burgers look really good! Have you tried them on the grill? And i’ve never made sweet potato fries before. I’m gonna do it!

    We had a schnauzer (sp) – Bam Bam – who did the same thing. They hate to see you leave – but know your coming back.

  8. mmm yum, will have to try these out! My lab, Lilly, does the same thing – she runs from window to window, making sure she grabs one last glance at us as we drive away….then she goes up to my parents bed to sulk:)

    I am glad you both loved the black bean burgers! I have been making these for about 5 years. Same recipe with a little extras. I always add 1 tsp hot sauce to the egg/cumin/chili powder mixture. I also sometimes throw in a small can of diced green chiles with the bell pepper, onion and garlic. They are tasty! And, if you have a ripe avocado, it is delicious as a topping!

    Andrea! Ryan and I tried to black bean burgers last night and they were delicious! My only comment is that they were really spicy so next time we make them we might pare down the cayenne a bit. But otherwise, totally delicous and easy (and cheap).
